Gimme S’More: Celebrate National S’mores Day the Homemade Way

There’s just something irresistible about a gooey marshmallow on top of melty chocolate, all smushed between two crisp graham crackers. Is your mouth watering yet? S’mores are so well-loved, there’s an entire day dedicated to them. That’s right, National S’mores Day is August 10th! In honor of this messy treat we’ve rounded up three scrumptious s’more recipes that don’t require a campfire.

S’more Cupcakes
These s’more cupcakes swap traditional marshmallows for luscious marshmallow cream. Start with a box of yellow cake mix and follow the directions on the back of the box to make the batter. Fold 1 cup of graham cracker crumbs and 4 (1.55oz) finely chopped milk chocolate bars into the cake batter. Divide batter into muffins cups. Bake at 350 degrees (325 recommended for dark or nonstick pans) for around 20 minutes or until a toothpick comes out clean. Let the cupcakes cool completely before icing them. For the icing, beat 1 (7oz) jar of marshmallow creme, ½ cup softened butter, and 2 cups of powdered sugar together in a bowl until combined. Add a little milk to the mixture just until the icing is spreadable. Garnish each cupcake with a small rectangle of chocolate and serve.

S’more Dip
This rich dip is sure to be a hit at your next backyard cookout. Chocolate is a key ingredient for s’mores and you’ll need 1 cup of milk chocolate chips (semi-sweet would work too) for this dip. Combine the chocolate chips, 2 tablespoons of milk, and a 1 ½ cups of regular-sized marshmallows into a saucepan. Heat the mixture over medium-low heat, stirring until it’s smooth and combined. Pour the chocolate mixture into an oven-safe dish and top with a half cup of marshmallows. Stick the dish under the broiler until the marshmallows on top are lightly toasted. Serve with graham crackers and a big glass of milk to wash all the goodness down!

S’more Cookies
This cookie recipe starts like any other, but the results are unlike anything you’ve tasted. Mix two sticks of softened butter with ½ cup of white sugar and 1 ¼ cup of packed light brown sugar. Continue to mix and add in 2 eggs one at a time until combined. Mix in 2 teaspoons of pure vanilla extract. In a separate bowl, mix together 2 ½ cups of all-purpose flour, 1 cup graham cracker crumbs, 1 ½ teaspoons baking soda, and ¾ teaspoon of salt. Gradually incorporate the flour mixture into the wet ingredients until the mixtures are combined. Gently fold in 1 cup milk chocolate chips and 1 cup mini semi-sweet chocolate chips. Scoop spoonfuls of cookie dough onto a parchment paper-line cookie sheet. Add s’more goodness to the cookie dough by topping them with mini marshmallows, chocolate bar pieces, and chopped graham crackers. Bake for about 10 minutes at 350 degrees. Bet you can’t eat just one!
