4 Luscious Layered Desserts For Spring

Spring has many layers. The sun is shining a little bit brighter up in the sky, even on rainy days. The grass below is suddenly greener, and trees and colorful flowers are beginning to bloom all around. Birds are singing, bunnies are hopping, and everyone is venturing outdoors to enjoy warmer temperatures and a breath of fresh air. To celebrate the season, we’ve rounded up some luscious, layered desserts that are perfect for a picnic in the park, an Easter brunch, or just because.

Coconut Layer Cake

A list of layered desserts would be incomplete without a layer cake or two. Naturally, coconut and carrot cake came to mind. This Coconut Layer Cake from Martha Stewart features an impressive six layers, so pull out those cake pans from your kitchen cabinets and pull up that heavy-duty stand mixer! Tender layers of sour cream cake are stacked with coconut cream filling and topped with sweetened coconut flakes, but don’t be intimidated — marthastewart.com offers an instructional video along with the recipe.

Carrot Layer Cake

As for luscious, layered carrot cake, this recipe from Fine Cooking is truly a classic. In addition to all the basic cake ingredients found on your kitchen pantry cabinet, you’ll need finely grated carrots, walnuts and raisins, plus ginger, nutmeg and cinnamon from your spice rack. Topped with a homemade vanilla cream cheese frosting, this Classic Carrot Cake recipe is featured in the Fine Cooking 2021 Easter Guide, so be sure to check it out!

Banana Pudding

Old-fashioned banana pudding is a staple of backyard barbeques in the southern states, and this recipe from Southern Living is the real deal! No boxed pudding mix here, made-from-scratch banana pudding is a DIY layered dessert project, so you will need to grab a saucepan from your cookware organizer to get started. Of course, you will also need to get those bananas sitting on your countertops and a box of vanilla wafers from your kitchen pantry cabinet. Click here for the recipe from Southern Living.

Strawberry Pretzel Dessert

This super sweet layered dessert is a favorite of Paula Deen fans and has been the hit of many a spring luncheon. The crust is a mix of crushed pretzels, sugar and butter. The next layer is a mix of cream cheese folded with whipped topping and some more sugar. On top sits a festive layer of strawberry gelatin, berries and pineapple. Once set, cut into squares, and add another dollop of whipped topping before serving. For the full recipe from Paula Deen, click here.
