As tacos become increasingly popular, you might go with a more authentic take than you would find at your typical taco restaurant. Potato Tacos, or Tacos de Papas, have a fried crunchy shell and are filled with potatoes seasoned with cumin, garlic, oregano, and cilantro. Squash Blossom Sauté, or Guiso de Flor de Calabaza, is a nice side dish that is both authentic and fresh for summer time. It includes jalapeño, onion, garlic, tomato, squash, and of course, many squash blossoms. To go a little out of the ordinary, you could replace your standard salsa with Spicy Fresh Pineapple Salsa, or Salsa de Piña Picante. Jalapeños bring the heat, while the pineapple, lime juice, and cilantro bring the freshness.
Many of these ingredients, like tomatoes, onion, and garlic, will store better in your pantry cabinets or kitchen storage cabinets than in the fridge. These dishes would be perfectly served on your kitchen island for guests to then enjoy either chatting around the kitchen our out on the back patio.
