Go Crazy For Granola This Summer!

Easy, healthy, delicious granola — it’s the perfect summer snack. Whip up a batch in your kitchen to take to the beach or pool, or just pull up a stool at your breakfast bar, and enjoy the goodness! Here are two of our favorite granola recipes from two of our favorite celebrity chefs. Stock your kitchen pantry cabinet with rolled oats, nuts, and honey, and go crazy for granola. Let’s get crunching!

Alton Brown’s Granola

Alton Brown knows a thing or two about Good Eats. His recipe for granola is a classic — made with rolled oats, raisins, nuts, coconut, and maple syrup. And it’s the perfect simple recipe to start with.

Preheat oven to 250 degrees F. In a large bowl, combine 3 cups of rolled oats, 1 cup of slivered almonds, 1 cup of cashews, ¾ cup of sweetened, shredded coconut, and 1/4 cup plus 2 tablespoons of dark brown sugar.

In a separate bowl, combine 1/4 cup plus 2 tablespoons of maple syrup, 1/4 cup of vegetable oil, a ¾ teaspoon of salt. Combine your wet and dry ingredients and spread onto two sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.

Jamie Oliver’s Granola

Chef Jamie Oliver is all about eating healthy, and he has started a global Food Revolution to help promote a positive change in the way our children access, consume and understand food. His recipe for granola includes an abundance of wholesome ingredients you can feel good about.

Start by preheating your oven to 350 degrees F. In a large bowl, combine 2 cups of quick cooking oats (not instant), 1 cup of mixed nuts (hazelnuts, almonds, walnuts, brazil nuts), ¼ cup of mixed seeds (sunflower, poppy, pumpkin, sesame), and ¾ cups of unsweetened, dried, shredded coconut. Top with 1 tablespoon of ground cinnamon.

In a separate bowl, mix 5 tablespoons of maple syrup (or honey), and 5 tablespoons of olive oil. Drizzle over your granola, and stir before spreading your ingredients onto a sheet pan. Cook for 25 to 30 minutes, stirring every 5 minutes to achieve an even color and to prevent burning.

While your granola is cooking, chop large dried fruits such as apricots or cranberries. Remove your granola from the oven and transfer it into a large bowl. Add chopped dried fruits and raisins.

Once cooled, store your granola in a sealed container, in a cool place, for up to two weeks. Here’s to healthy summer snacking!
